The classic Dark & Stormy cocktail—a simple mix of rum and ginger beer—will always be a favorite of ours…but even the greats could use an update from time to time. This weekend, we’ll be whipping up a batch of “Fall Ahead, Fall Behind” cocktails from the Mad Men-esque Avery Bar located in The Ritz-Carlton, Boston Common. "This is a great drink for when you're not quite sure what you want to order," explains Sterling Jackson, the bar’s mixologist. "And I love the counterbalance in this cocktail. It's bright, but it's dark. It's sweet, but it's not too sweet. It's simple, but it's complex and interesting at the same time." Try one for yourself using the recipe below!

Fall Ahead, Fall Behind

2 oz Papa Pilar Dark Rum ($38; winefolder.com)
¼ oz pure maple syrup
¼ oz fresh lemon juice
2 dashes Angostura Bitters ($5; walmart.com)
Dry hard cider ($13; pjwine.com)

1. Add all ingredients except the hard cider to a Boston shaker filled with ice.

2. Shake well and strain over high in a high ball glass.

3. Top off the glass with hard cider. Garnish with a lemon peel.
