Portable Moroccan Salad

What’s worse than not having time to make yourself a weekday lunch? Being the owner of a sad looking desk meal. Shades of brown against a white paper plate aren’t exactly midday mood boosters. Chef and food activist Jamie Oliver is here to save your lunch – and make you the envy of your co-workers – with portable jam jar salads from his new collection of healthy recipes, Everyday Super Food ($18, Each salad packs vibrant layers of energy-boosting veggies, protein, grains, carbs, and just a touch of dairy. Portable Moroccan Salad

Serves: 1

Total time: 20 minutes


1 cup of cooked whole-wheat couscous (⅓ cup if cooking from scratch)

½ pomegranate

2 heaping tbsp of fat-free plain yogurt

1 tbsp of extra virgin olive oil

1 tsp of finely chopped preserved lemon

2 inches of sliced English cucumber

¼ of a shredded bibb lettuce

½ of a coarsely grated carrot

1 peeled and sliced blood orange

2 oz of drained chickpeas

2 sprigs of fresh mint

2 sprigs of fresh cilantro

½ oz of feta cheese

1 good pinch of toasted sesame seeds

Chopped pistachios

Cumin seeds


1. Spoon the couscous into the base of a 1-liter jam jar. Add the pomegranate seeds.

2. Mix the yogurt with olive oil and preserved lemon, then season to taste and spoon over the couscous.

3. Make up the rest of your jar with the cucumber, lettuce, carrot, blood orange, chickpeas, mint, cilantro, feta, toasted sesame seeds, pistachios, and cumin seeds. Then lid on.
