This Easy Kale Salad Recipe Will Brighten Up Your Winter Dinner

With the recent wrath of Storm Jonas, it can be tempting to subsist on cold-weather goodies like hot chocolate, cookies, and anything covered in melted cheese. While delicious in moderation, these treats can leave us feeling sluggish. Instead, try whipping up the bright, flavorful raw kale salad with ginger dressing from Cook. Nourish. Glow. Raw Kale Salad with Ginger Dressing

Serves 4

Ingredients

1/4 lb kale
1 tsp sea salt
1 orange, peeled and cut into segments
1 small red onion, peeled and finely diced
1 avocado, peeled and cut into cubes
Optional: a squeeze of orange juice and a handful of seeds to serve

For the Dressing
1 tsp raw ginger juice (finely grating a 3/4-inch piece of fresh ginger, then squeezing it through a cloth, will extract approximately this quantity of ginger juice)
2 tsp raw honey
3 tbsp macadamia nut oil
2 tbsp raw apple cider vinegar
1 tsp Dijon mustard
Juice of 1/2 a lemon

Directions

1. Remove the stems from the kale leaves and cut them into strips. Combine with the salt in a large bowl and massage. Put a weight, like a plate with a bottle of water on top of it, on it and wait for 15 minutes. Toss the kale again and replace the weight for a further 10 to 15 minutes. Drain and rinse thoroughly in several changes of water. Spin dry.
2. To make the dressing, blend all the ingredients in a Vitamix or food processor.
3. Combine the orange, onion, and avocado with the kale. Add a squeeze of orange juice and a handful of seeds, if you like. Pour the dressing over and serve.
