This summer we're smoothie-obsessed. We're ditching high-sugar drinks and chemical-laden sips in favor of bursting-with-vitamins smoothies.

In our June issue, we enlisted smoothie queen Tess Masters (the chef behind the wildly popular blog the Blender Girl) to teach us how to create her Tastes-Like-Ice-Cream Kale Smoothie, her spin on a top-selling recipe by her friends at SunCafe in Los Angeles. Superstar kale, which is loaded with cancer-fighting antioxidants, oxygen-producing iron, and bone-strengthening vitamin K, makes it as healthy as a bowl of greens, while bananas, cashews, and dates render it as indulgent as dessert. You can even freeze your leftovers for later!

Tastes-Like-Ice-Cream Kale Smoothie

2 cups

1 cup water
½ cup raw unsalted cashews, soaked for 2-4 hours, then drained
1 cup torn curly green kale leaves, plus more to taste
2 ripe bananas, fresh or frozen
⅛ cup diced pitted dates
½ tsp natural vanilla extract
2 cups ice cubes (a little less if using frozen bananas)
¼ tsp minced ginger, plus more to taste
½ tsp probiotic powder

Blend ingredients until smooth
