On Wednesday night, Chef Mei Lin (below) won the premiere episode of Top Chef season 12 with her congee and caramelized pork recipe (above). The recipe was inspired by a dish Lin used to cook with her grandfather and was topped with crispy shallots and black garlic—yum! If you're unfamiliar with congee, it's a rice porridge dish that's popular throughout Asia and is able to take on many flavors.
