There's nothing like breakfast in bed at a hotel—especially when the hotel in question is Shutters on the Beach. For the uninitiated, the iconic oceanfront space in Santa Monica, Calif., is the ideal place for R&R and scenic views, so it makes total sense that, on a break from promoting the new season of Shameless, Emmy Rossum would stop in for a quick meal.

The actress took to Instagram to share a pic of the hotel's popular Bull's-Eye Eggs, a Mediterranean-influenced dish consisting of poached eggs, grilled marinated eggplant, and spicy tomato sauce. "Each ingredient plays off each other to make a perfect balance," says executive chef Vittorio Lucariello. See for yourself at home with the recipe below.

Bull's-Eye Eggs

Serves: 4

Ingredients

For the sauce
1 oz onion, chopped
10 oz tomato
1 tbsp olive oil

For the eggplant
10 oz eggplant, sliced in 1-inch pieces
1 clove of garlic, chopped
1/2 oz parsley, chopped
A splash of vinegar

For the eggs
8 eggs
1 tbsp butter
3 oz arugula
1 oz fresno chili peppers, sliced thin

Directions

1. Sauté the onion with olive oil and tomato and cook for 10 minutes. Set aside.

2. Slice the eggplant. Add salt and pepper, olive oil, and grill for approximately 10 minutes. Marinate with garlic, parsley, and vinegar. Set aside.

3. Crack the egg and fry the sunny-side up egg.

4. Place the eggplant in the plate, add the tomato sauce, top with a sunny-side up egg. Garnish with arugula and chili peppers.
