Apple pie is all well and good, but if you really want to blow your Thanksgiving dinner guests out of their usual wine stupor, try serving up a drink that tastes strikingly similar to everyone's favorite fall dessert. This creamy cocktail, courtesy of Beautique, a posh restaurant in Midtown Manhattan with interiors influenced by Coco Chanel's Paris apartment (right on down to the mirror-lined staircase), uses egg whites—just like in the classic baked dish—to create a frothy foam that adds extra sweetness. "It's as close as you'll get to the satisfying experience of biting into a slice of apple pie,” says Wine Director Brett Mendl. See for yourself below.
1. Into a drink shaker, add 1 egg white, vodka, and spiced cider.
2. Close shaker and shake without ice to start frothing the egg white for about 15 seconds.
3. Add ice to shaker and shake for 30 seconds.
4. Strain into a martini glass and sprinkle vanilla-cinnamon sugar on top.
