With this four-tier hexagonal confection, the Mahers conjure up the shimmery scales of sea creatures; roughly 500 fondant circles—in varying hues of pale green—are adhered to the cake with royal icing. Occasional coppery-edged rings recall the brilliant flash of fish as they swim.
