Roast Chicken Breast with Peach Panzanella
“I love the bright flavors of this salad,” says chef Joseph Ogrodnek of the cozy Brooklyn hot spot Battersby, known for its seasonal cooking. He gives his own twist to traditional Italian panzanella (bread salad): “You can taste the peaches in every bite.” The natural juices from the fruit, including cherries and citrus, blend well with the olive oil to create the dressing—just be sure to add the croutons right before serving so they keep their crunch.
